Happy Memorial Day! Today marks the unofficial start of summer with barbecues and weekend trips. Below are some of my favorite things about summer ....

Birthday

It was my birthday yesterday! Hooray!

I received some beautiful flowers that made me feel so loved!

Zucchini Goat Cheese Wrap

This recipe is adapted from something I found online. Super healthy and super yummy!

Ingredients:

Zucchini

Spinach 

Goat Cheese

Lemon Juice

Parsley

Basil (or italian/basil seasoning)

1.) Cut zucchini is around 1/4" sections lengthwise

2.) Dispose of outer sections

3.) Grill zucchini sections until cooked (about 5 minutes on each side)

4.) Mix goat cheese, lemon juice, and herbs in a bowl

5.) Spread goat cheese mixture on zucchini sections

6.) Place spinach on top of goat cheese mixture and roll zucchini
