This recipe is adapted from something I found online. Super healthy and super yummy!
Basil (or italian/basil seasoning)
1.) Cut zucchini is around 1/4" sections lengthwise
2.) Dispose of outer sections
3.) Grill zucchini sections until cooked (about 5 minutes on each side)
4.) Mix goat cheese, lemon juice, and herbs in a bowl
5.) Spread goat cheese mixture on zucchini sections
6.) Place spinach on top of goat cheese mixture and roll zucchini
